How many email addresses can the MP C3500 fax forward to? The Muratecs can do quite a few but as far as we know the Ricohs will only forward to one. Has this changed with the newer models like the MP C3500?

You are correct...they can only forward to one email address. But, I believe on the newer models you can forward a specific incoming fax number to a specific email address. I'm just not sure how many specific forwards you can set up or how to do it.
You are referring to the "Designated Sender" feature and Ricoh's have had it for the last several generations. Each unit allows for up to 30 designated senders. Routing information can be created based on the "caller ID" of the sending fax and does not require any action on the part of the sending fax except to have appropriate Fax Header information that the FCC requires anyway. It still will only send to one email address but each of the 30 can have a different email destination. Then of course any that have not been "designated" will go to the default email.
You can forward to one destination, which can be a single email address, or a group that contains multiple email addresses.
