If the software really only allows for one sided printing your only option I know of would be to force duplexing at the printer level or do a print to file or print to PDF then print the PDF duplexed and stapled.

Art, I know on many models you can set the PCL defaults (EX: Two Sided & Duplex). These will be ignored when you print form a PCL Driver because the Driver will over ride the defaults. But if they print from a host system the MFD PCL defaults will be used. The other thing you can propose,(Most Host Admins will hate the idea) is set up a Windows Print Driver on a Windows Server. make sure LPD is running and set the Printing Preferences (I also set the Printing Defaults) to DX & Staple...

Who knows? It would answer and objection to the color of the device if the client did not want black. Brings back memories of a close. When the client asks :what color does it come in? You then state "what color do you want it in"? Oh those were the days

Since white is "optional" it will be interesting to see whether the machine can be ordered for each color, or if there's setup involved to replace all the panels. If the latter, that seems like a lot of wasted plastic.
