One of my accounts states that whenever they use scan2email from the MFP, all of the outbound emails are tagged that they are coming from the principals email address.  Can that be changed to a generic email address such as copier@xty.com?  And does that have to be a valid email address?

Sure.  You have auto specify sender's name turned on and you have the principal's email address set as the administrator email address on the email set up page in web image monitor.  Simply web in and change that email to whatever you want it to be.  I would want it to be a valid email address so you don't run into other problems.
